Schabziger is a specific Swiss cow cheese that is typical for its mature taste and green color that comes from fresh herbs. The cheese has been exclusively produced in the Glarus canton for centuries and originally was manufactured by monks since 8th century. Now, its exclusive producer is a company named Geska (Gesellschaft Schweizer Kräuterkäse-Fabrikanten). As a relatively small company, Geska strives to support local farmers and therefore take their milk on a daily basis.
